Title: definition of an exhibit

1) can an exhibit be only one document or can it be a groups of related documents that prove one point?

Either, or. You can label/collate exhibits as necessary to make your proof easier for the court to follow. Volumous documents, may have summaries, as long as a witness testifies that he/she has personal knowledge that the summaries fairly and accurately represents the documents summarized.
